  Crown of vainilla and crocanti ( 6 people )   Nails of pig      
  Monkfish in clams and prawns sauce (4 people) Tiramisú      
     
 

Crown of vainilla and crocanti ( 6 people )

Ingredients:

75 gr of sugar ( for the syrupy)
a teaspooful of lemon juice.
300 gr of whipped cream
3 eggs
a spoonful of podwered cacao ( for the crocanti )
100 gr of roasted almonds

 


The receipe making process.

Smelt the sugar with the orange juice in a saucepan.When the syrupy is gliding, add the almonds. Then remove slowly. Pour quickly on the marbele or grasy aluminium foil. Make sure its cools.Then grind up all the ingredients.

Separate the egg whites,beat the egg yolks until being creamy. Add whipped cream and then mix everything softly.

Whisk the egg whites until they form peaks and add the previous mixture removing carefully. Finally, add the crocanti ant put a pinch of vainilla

Put all the ingredients in an tin and put this in a freezer at least six hours.Soak a tea towel in hot water in the momento of take it out and put the tea towel around the tin so as the ice cream melts easily.

Nails of pig

Ingredients:

Salty nails of pig
Tomatoes
Red pepper
Green pepper
Onion
Garlic
Parsley
Oil
A glass of white wine



 

 

The receipe making process:

Leave the nails cut in half to soak during 24 hours. Put water in a big saucepan and boil the nails.Make sure it cools

Cook a chopped onion and garlic with well chopped vegetables in a saucepan. Make sure all the ingredients are well done.

Meanwhile fry the small nails in a different saucepan.The small nails must as dry as possible).When they are half cooked, put them in a lunch box and add the chopped onion and garlic over them( you can also use the whish mixer to do this). Then add the glass of white wine, a small quantity of oil and fry them in water. Make sure all this boils a few a long time and then serve it with some boiled potatoes.
